This fresh peach summer salad is full of bright flavors and whole food ingredients. The sweetness of the ripe peaches combined with the crunch of the candied almonds are to die for. It’s healthy and delicious.

Peach Summer Salad
Peaches are hands-down my favorite fruit. They’re just the right amount of sweet and juicy.
My mother-in-law has started a tradition where we all get together and bottle peaches at the end of the summer.
The bottled peaches are great because they can be enjoyed all winter long, but there’s nothing better than a fresh peach.
We buy peaches by the bushel from local farmers and we eat them everyday. It’s my favorite!
This year I’ve been putting peaches in my fresh green salad and it is awesome.
I’ve tried many combinations and found a mix that my family loves.
We call it peach summer salad, because we only have fresh peaches at the end of the summer and they are definitely the star of the show.
What goes in Fresh Peach Summer Salad?
Red Leaf Lettuce – While this salad will still taste fantastic with green leaf lettuce or romaine lettuce, I love to use red leaf lettuce. Usually, the darker the leaves the more nutrient dense. Red leaf lettuce is lower in calories and provides more nutrients than romaine lettuce and is higher in antioxidants.1
Diced Peaches – Of course you can’t have a fresh peach salad without peaches. Peaches are packed with many nutrients or antioxidants. Leave the skins on to get more nutrition, but be sure to wash them thoroughly to get all of the fuzz off.
Candied Almonds – This salad tastes amazing with my coconut candied almond recipe. They’re candied with coconut sugar which makes them healthier than regular candied nuts. The coconut adds another fantastic flavor to the nuts. They only take a few minutes to make and they’re definitely worth the effort.
Dried Cranberries – The texture and slightly tart flavor of the dried cranberries (craisins) rounds out the sweetness of the salad really well. Cranberries are great for the immune system, they help with constipation and they are known to reduce the incidence of urinary tract infections.2
Celery – Celery is one of my favorite things to put in a salad. When diced small, the celery adds a fabulous crunch and a depth of flavor without being overpowering. In addition to being nutrient dense, celery is full of antioxidants and may be helpful with digestion.
Green Onions (Scallions) – The peppery burst of flavor that comes from onions is fantastic in this salad. Instead of scallions, you could use red onion diced very finely.
Feta Cheese – Cheese is a great addition to salads. Feta in particular adds just the right amount of creaminess and saltiness to the salad.
Raspberry Vinaigrette – One of my favorite salad dressing brands is Skinny Girl brand because they don’t use processed sugars and oils. We love this salad with raspberry vinaigrette, but is also amazing with poppyseed dressing or even balsamic vinaigrette.
How to Make Fresh Peach Summer Salad
1. Prepare coconut candied almonds and let cool.
2. Rinse lettuce, slice finely, then dry using a towel or a salad spinner.
3. Wash peach to remove fuzz, remove pit and dice. Dice celery and scallions.
4. Add lettuce, peaches, cranberries, celery, and green onions to a bowl and toss.
5. Add coconut candied almonds, feta cheese and vinaigrette just before serving.
Notes
- This salad can be made dairy free by simply leaving off the feta cheese.
- I don’t recommend saving this salad after the first day. It will become soggy and will not taste fresh.

- 1 head red leaf lettuce, sliced thinly
- 1 large peach, diced
- 1/2 cup coconut candied almonds
- 1/3 cup dried cranberries
- 1/2 cup diced celery (about 3 ribs)
- 3 scallions, diced
- 1/4 cup feta cheese, crumbled
- Raspberry vinaigrette
Instructions
